Egg Stew

Almost Everyone loves egg stew (I do J) because it is one of the easiest stews to make. It’s also versatile because it can be eaten with almost anything you can think of ranging from rice, yams, beans, plantains, potatoes and most of the time bread.
Ingredients: 2 servings
-1 cooking spoon of Vegetable oil/Butter
-3 large plum Tomatoes
-2 medium sized Fresh pepper
-1 large Onion
-Salt to taste
-Seasoning (Maggi/Knorr)
-3 eggs


Procedure
-Chop the Onion, Tomatoes , pepper and set aside


-In a frying pan, heat the Vegetable oil/butter till hot then reduce the burner to medium heat

-Add your chopped Onion, Tomatoes , pepper and fry for about 3mins

-Add your Salt and seasoning then keep stirring till the oil separates from the tomatos, onions and pepper.

-Crack your eggs into a bowl and whisk

-Pour the egg mixture into the pan and stir gently to in-corporate with the fried tomatoes, onions and pepper.

-Reduce the heat and leave for about a minute and you are done!

-Serve with whatever dish you choose i.e Boiled/Fried Yams, Rice, Plantains, Potatoes
