Originally, coconut rice is a simple meal made with Coconut milk, Rice and Seasoning. The wonderful thing about coconut rice is, it still retains that yummy coconutty flavor even after absorbing the various seasonings added to it. In this recipe, I decided to put in a little twist to make it a little bit more interesting by adding my special chicken stock……Enjoy!
• Cook time: 35 minutes

•4 cups Rice, parboiled (Rice was measured with saturated milk cups)
•1 litre Chicken Stock
•1 litre Water
•Seasoning (4 cubes)
•1 tbsp. Salt
Step1: In a medium sized pot, pour the parboiled rice, coconut milk and water. Leave to boil for about 10mins
Step 2: Add the Chicken stock, Seasoning and salt then cover the pot and leave to cook for about 25mins till the rice absorbs the whole liquid in the pot.
Step 3: Once done, turn off the burner and serve
