Uziza pepper also known as Ashanti pepper, benin pepper, false cubeb e.t.c is a common spice used in Nigerian dishes. It’s hot, bitter, aromatic and has so many medicinal uses. The leaves are known as uziza leaves and are used in soups. The pepper is used in Nigerian soups where it gives it a “hot” and pungent aroma. It’s quite expensive and therefore used sparingly. Most of the time, its added to pepper soups and given to women after child birth to cleanse the womb

Palm Oil Stew

Top of the Day to you all :). Hope you're having a wonderful weekend. So i woke up this morning with a strong Craving for Palm oil stew and after the early morning service, i scurried to the market to get ingredients for this native dish. Palm oil stew is a traditional stew which is quite popular in the villages and road side food hawkers. As a classic Nigerian dish, it is referred to as “Alapa” and it is highly nutritious due to the nutrients in the tomato puree and the high level of Beta carotene contained in palmoil. Alapa can be enjoyed with rice, Beans (Agoyin in my favorite), Fries i.e plantain, potatoes, yams and just about anything

How to make Pap (eko,akamu,ogi) from scratch

Pap is one of the common meals found in the Nigerian diet. This starchy food is made from corn and is 99.5% purely carbohydrate. I usually buy mine from the market but as they say, nothing tastes as good as homemade food. Making pap from scratch I’d say isn’t a walk in the park because it takes almost a week to prepare but the end result is quite gratifying. Once made, it could be stored unprepared for weeks in the refrigerator without getting spoilt.

Ukwa (African Breadfruit)

One of my favourite nigerian dishes is Ukwa(Treculia Africana)which is the seed of the African Breadfruit. It's unique in it's own way and the taste is "fantabulous". In yoruba land, it's called afon; ize in Benin, Jekri and Sobo; izea in Ijaw; and ediang in Efik. Little wonder why it's highly priced in the market due to its nutritious and tasty values. There are different methods in which this dish is prepared but I'm going to show you how I prepare the plain version.

Did you know that taking oats daily in form of porridge, Baked goods, Drinks has a wide range of health benefits? Commercially, it has also been touted as being highly nutritious. My love for oats was intensified after reading an article by wiki's MyTravelCuisine where one of my porridge recipes was featured. I got to learn more about the health benefits one could gain by taking this wonderful meal.
