Cow meat pepper soup

There are different types of pepper soup such as; Goat meat pepper soup with assorted beef, chicken pepper soup, Cow Head, leg or tail pepper soup  fish pepper soup, the list goes on and on. Now this Hot & Spicy delicacy is one enjoyed by most people as an appetizer. Some occasions and gatherings are not complete without this savory dish. It’s really popular especially in bars and restaurants were people go to hang out. For this particular recipe, I enjoyed mine with Agidi (Nigeria’s jello like meal)…..Yummy!

Ingredients:

• ¼ Kilo Cow meat 
• ¼ Kilo Cow intestines (a.k.a. Roundabout) 
• 2 Yellow scotch bonnet Pepper (ground) 
• 1 tbsp. Mpuru uziza (Ground) 
• 2 tbsp. Black pepper (ground)- optional 
• ½ Bulb Red Onion (Diced) 
• ½ Bulb Garlic (Minced) 
• 1 cooking spoon crayfish 
• 1 tsp. thyme 
•A handful Scent leaves (Nchuawun), Chopped- optional 
• 3 Stock cubes 
• 1 liter Water 
• Salt 

Preparation/Directions 
Before preparation, you have to note that the intestines come with lots of saturated fat. These have to be removed before cooking due to the health risks and washed inside out. It takes time removing it but the end result is always worth it.

1. Wash the Cow meat and intestines (Cut into sizable pieces) into a medium sized pot

2. Add the scotch bonnet Pepper , thyme, Red Onion, water, salt and cook

3. 15mins into the cooking, add the Black pepper, Stock cubes, and leave for another 15mins.

4. Add Crayfish & Scent leaves ;leave to simmer for 5mins

5. Remove from the burner and serve Hot with Agidi (Eko)
