Most of my favorite holiday traditions has a lot to do with food. Not only do i love to prepare meals that'd make people go awwwww!!! and ahhhhh!!!, i also love to prepare meals that'd make people go....Yuummmm!!!! :D. I made this for breakfast yesterday for the fam and they all loved it. In Nigeria, this tasty meal is known popularly as Fiesta. it's made from baked potatoes, eggs, flour and vegetables. Also, it's pretty easy to make as i'm about to show you. Click here to view a different version of this recipe
• 4 medium Sized Irish potatoes
• 4 eggs
• 1 medium sized chili pepper
• 1 medium sized Green pepper
• 1/2 small onion
• 1/2 cup milk (1tbsp. powdered milk + 1/2 cup water)
• 1/2 tsp. Salt
• 1/2 cup all purpose flour
Directions:::
Step 1: Dice the Green pepper, Chili pepper, Onion and Potatoes - Set Aside
Step 2: Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 7 minutes or until tender; drain. Alternatively, you could steam the chopped Irish potatoes for about 5 minutes and drain before adding it to the mixture.
Beat the Eggs well, add the milk, salt and flour and mix. Gently add the veggies including the potato and stir well to incorporate.

Step 3: Pour the mixture into an oven proof pan or dish and place in the oven. Bake, uncovered, at 350° for 30-40mins or until center is set on medium heat till it firms up. Serve!

ReplyDeleteno it's not to be mashed. you're to peel and dice the potatoes. if you want to reduce the bake time, steam it in little water for 5 minutes before adding to the egg and vegetable mixture.
