How To Make Unripe Plantain Swallow


Did you know you can do a whole lot with plantain (both ripe & unripe)? From pottage to snacks to even Swallow. Yes you heard right, Swallow...That fufu like ball used for soups. Now plantain has been used in making "swallow" for quite a long time.
There are two ways to make plantain swallow a) with fresh plantain & b) with dried plantain flour. The freshly prepared plantain swallow tends to have a yellow colour when it's made but changes colour due to oxidation when it sits for a while & the plantain swallow made with plantain flour naturally has a brown colour when it's prepared. Unripe plantain contains a high nutritional value with moderate amount of calories, and this is why it's great for people on special diets such as diabetes, those watching their weight.

How To Make Unripe Plantain Swallow

Ingredients:
3 Unripe Plantains
 1 Cup Water

Instructions:

Directions:::
Step 1: Peel the plantain and chop into smaller bits. Place in a blender, add some water and blend till it forms a smooth paste. 

Step 2: Pour the blend into a medium sized pot and on medium heat, turn the plantain puree in the pot with a wooden spoon. Keep turning for about 3- 5 minutes till it thickens and your plantain swallow is ready. Scrape the plantain from the sides of the pot into the pot and add 1/2 cup of water. Cover the pot and let it cook for 3 minutes or until the water dries up. Mix with the wooden spoon and serve. 


Kitchen Notes:

Unripe plantain tends to turn brown when it sits for a while. This is quite normal and not dangerous. Browning is caused by it's oxidation with oxygen in the air.
