Frittata Recipe With Potato Ham & Mushroom

If you love potatoes like i do, then you'd love this fiesta of ingredients. This simple egg and potato combo takes breakfast or snack time to a whole new level. The fun thing about it is, you could add your own twist to it by adding your own ingredients with whatever you have lying around in your pantry or refrigerator?

This tantalizing dish was first popularized by a very well known restaurant. Here in the country, the common name "Potato Fiesta" is synonymous with "Having a party or festival" but the ORIGINAL name roughly translates to "Fried". Got potato & eggs with a frying pan? Why not Frittata it :D .

Potato Frittata With Ham & Mushroom 

• 6 Eggs
•7 medium sized Irish Potato
• 8 Button Mushrooms
•1 Onion
• 5 Ham Slices
• 2 Bell peppers - optional
• 1 Cooking Oil
• Salt to taste

Step 1: Dice the potatoes and boil in water till soft. 

Step 2: Crack the eggs into a bowl. Add chopped green and yellow bell peppers + Salt to taste. Whisk and set aside. 

Step 3: Pour the oil in a pan and heat up till hot. Add the Onion, ham & mushroom. Stir fry for about 3 minutes. Pour in the whisked egg mixture and turn down the heat from the burner to enable it to set. 

If you have a lid, you can cover the pan and leave it till it sets completely. Most times, you'd also need to place the pan in a grill to enable the top part set completely. 

Step 4: Once the potato frittata is set, Slice and serve. This can be enjoyed as a meal or a snack. Enjoy!
